Stay-cation

Sometimes I am so busy planning trips everywhere else that I forget to check out things to do in my own neck of the woods.  I am headed out tomorrow on a new adventure, so this weekend I decided to stay local  and have myself a “staycation”.

Living right outside of Baltimore is the best. You have the city just a stone throw away, but you also have the beautiful scenery of rural Maryland.  I love living in Maryland, it is such a diverse state and each direction of it brings something new… If you drive West you will find mountains, East you will see the beautiful shores along the Coast, North will take you right into Baltimore and South will take you down into DC.  We have a little bit of everything in this tiny little state.  So the thought of staying here for the weekend sounded pretty good to me.

One of the first things I do whenever I am visiting a new location is to check out what the area has to offer in the food department, so that is exactly what I planned to do this weekend.  This lead us to our first of many stops, and to the BEST enchiladas I have ever sank my teeth into.   Processed with VSCOcam with c1 preset

I am a huge fan of BBQ, especially in the summer time.  So when I heard claims about this BBQ joint, only a few miles away from my house, being praised as the best BBQ in all of Maryland, I had to check it out.  It was everything I was looking for, and then some.  Seriously – if you are ever in Maryland, check out Andy Nelsons BBQ.  Not only is the food incredible, but the ambiance and atmosphere definitely help to paint the image of eating your meal down in the Hot South itself.

As you can imagine, after 3 bottles of wine and breaking out some dance moves never seen before { and should probably never be seen again } we were feeling a little lethargic this AM.  Hungry but not wanting to go anywhere, much less move from the bed I opened my fridge to see what I could work with, which was not much. I love waffles, but didnt have waffle mix so I improvised with what I did have – Cinnabon Cinnamon Rolls.  I broke open the package and placed little premade buns on the waffle griddle, pressed it close and when I opened it back up – magic had been made.  We drizzled the gooey icing all over them, pigging out while we dug through the fridge to see what we could make next.

Crescent Rolls – I had crescent rolls! We got creative with each little roll, putting something new in every one.  The crescent rolls featured combos like Pepperoni + Swiss Cheese, Prosciutto + Goat Cheese, and Granny Smith Apples with Brown Sugar { they tasted like mini apple pies }  Put whatever you want in it, pop them in the oven at 375 degrees and cook for about 10 minutes, Voila! Your own little masterpieces!

Side Note : I am not alone in this amazing cinnamon waffle discovery.  If you want a more detailed way to recreate these guys check out Little Bit Funky’s recipe !

I think after this weekend, I will be making “Stay-cations” a more frequent occurrence.
