Pumpkin spice & Everything nice 

We are officially approaching the half-way mark of October.  What does that mean ? We are one step closer the best time of year, Christmas, but stepping farther away from the social acceptance of Pumpkin flavored everything.  This weekend I went into Pumpkin overload, eating, drinking, seeing anything with that special word, Pumpkin, in it.

After visiting a local Pumpkin patch and seeing quite possibly the biggest Pumpkin ever { the thing was 1500 pounds } – I was feeling super inspired.  So I decided to grab a can of Dancing Deer Pumpkin Spice Pancake Mix in hopes of making a delicious fall feast.  The second I opened the can, I new magic was going to be made with this mix.  It is a relatively easy recipe, requiring little additional ingredients.

To make the Perfect Pumpkin Spice Pancakes, you will need :

1 Egg

2/3 Cup of Milk { I used skim for a “slimmer” option }

2 Tablespoons of Melted Butter

Mix all of the above in a big bowl with a whisk – and heat up your Pancake Griddle { a stove top pan works as well ! }

Spray a little baking grease and place as many drops as your pan will allow.

Let each side cook for about a minute until they are perfectly golden – then enjoy!!

For an additional treat – we made a “toppings bar” by cutting up some Bananas, grabbing some Dark Chocolate Chips, Brown Sugar and of course, Maple Syrup to enhance the already amazing pancakes.

When all was said and done, I finally felt like I checked something important off my Fall To-Do List.
